RECIPE:
1kg Vanilla Sponge cake mix
400ml water (400g)
8 extra large eggs (450g)
METHOD: Place eggs and water into the mixing bowl. Add VANILLA SPONGE MIX and blend slowly to disperse powders. Whisk on high speed for 8 - 10 minutes. Grease the sponge tins and fill no more than ¾ of the tin with the BATTER. Bake at 190ºC for 35 – 40 minutes depending on the size of the sponge.
